Yesterday, I wanted to make some cookies, but as we didn't have any chocolate chips I decided to fill gap with marzipan, as there was some spare and I love marzipan, which I grated into the mixture. Which I'm glad I did because they were delicious, if I do say so myself. But Mum and Dad agreed as well. Definitely going to make these again, beautifully soft and chewy. Perfect kind of cookie.
